In our exquisite snow nougat (that is, marzipan, the process is very similar to that of the yolk although it only incorporates raw almond and sugar) natural vanilla is added so that the previous syrup obtained in the mechanics of the workman at more than 100 degrees Celsius allows an exceptionally delicate and exquisite flavor. The process is also completely manual. When the optimum dough has been achieved in the kneaders, the nougat is extracted by hand to be introduced into molds, where it is cooled for a day before being cut and vacuum packed. A lot of manpower is involved in that process.
