Origin of Artisanal Jijona Nougat

When talking about the origin of artisanal Jijona nougat, it is necessary to go back to the time when the Arabs still inhabited these regions.

It is said that by the 16th century, the Arabs who had colonized the town of Sexona introduced this sweet in their search for a food that contained nutritious ingredients (such as eggs and almonds) and that could be preserved for long periods of time.

Later, this sweet began to be produced in what is now Jijona, eventually becoming a representative treat of Christmas celebrations.

Ingredients of Artisanal Jijona Nougat

Artisanal Jijona nougat is made with specific ingredients to achieve its creamy texture as well as proper preservation. In the following list, you'll find the ingredients needed to prepare approximately 500g of nougat:

  • 100g Sugar
  • 200g Honey
  • 1 Egg white
  • 1 Tablespoon lemon zest
  • 200g Ground almonds
  • 1 Pinch of cinnamon

It is important to ensure that the ingredients are of the highest quality in order to achieve the desired results.

Preparation of Artisanal Jijona Nougat

The first step in making this sweet is to grind the almonds, unless you purchase good-quality ground almonds from a store, in which case you can skip this step.

Next, pour the honey and sugar into a hot pan over medium heat. Stir with a wooden spoon or spatula until you achieve a thick, homogeneous mixture.

Once this mixture is ready, remove the pan from the head and add the previously beaten egg white, mixing until smooth and free of lumps.

Finally, add the ground almonds and the pinch of cinnamon to give it a unique flavor. Mix well until the almonds are evenly distributed, then pour the mixture into the mold of your choice.

Press it down firmly to prevent air from entering the mold and let it rest for about 5 to 6 hours.

Hard (Duro)

This is Alicante nougat, also famous and one of the most requested by our customers. Hard nougat is characterized by its whitish color and differs from the soft Jijona nougat in that it is made with whole almonds, while the classic Jijona nougat is made with ground almonds, making it naturally softer to chew.

This type of Jijona nougat is characterized by its pronounced cinnamon flavor and a touch of lemon that makes the difference. Originally, it was a homemade artisanal nougat made for personal consumption, but little by little it gained popularity in the market and is now one of the most sought after by consumers.

Obrador

This is a broader category of nougats, made up of very assorted and slightly bolder ingredient combinations.

Among these varieties are fruit nougat walnut nougat (natanuez), toasted yolk, and natural yolk nougat.

This type of nougat slightly reduces the proportion of almonds to give greater prominence to the other ingredients.

Gourmet

This is the highest quality of our nougats. Gourmet-quality nougats contain 70% Marcona almonds, and this toasted almond is what gives our nougats their distinctive flavor. In addition, they contain 17% orange blossom honey, which provides an unmatched sweetness. This quality level is also known as Enhanced Supreme Quality.

Supreme Quality

This is the standard quality required by the Regulatory Council of Jijona and Alicante Nougat. These nougats must contain at least 64% Marcona almonds in their composition. Although this percentage is slightly lower than the previous category, it still gives the nougat a unique flavor and a level of quality that stands out in the market.

Formats of Artisanal Jijona Nougat

Artisanal Jijona nougat can be found in two main formats on the market. If you want to prepare it at home, you can use a mold in the shape you prefer to give form to the nougat. The two formats are the following:

Bar form

This is the most conventional and well-known format in which artisanal Jijona nougat is presented. At Turrones Candela Espi, this presentation comes in 300g and 150g bars for the Gourmet quality, while the Supreme quality comes in 200g bars.

Round or cake form

Less common than bar nougats, this format is characterized by being thinner in thickness compared to the others. The texture may vary depending on the type of nougat and the variety of its ingredients.
